Abstract

The Cilangkap Village Family Welfare Team plays a strategic role in empowering housewives by increasing local food processing capacity. This village produces large amounts of banana peel waste from the banana sale industry, necessitating innovation to utilize it as a value-added composite food ingredient that supports family food security. This program aims to increase partners' understanding of food security, P-IRT certification, and halal certification, as well as skills in creating innovative products based on banana peel and fruit composites as nutritious snacks. The approach used was participatory through FGDs, education on food safety and business legality, and training in making soft cookies and banana jam. Evaluation was carried out using pre-tests and post-tests, which showed a significant increase, namely from 60 to 80.63 on food security material, and from 60 to 76.84 on product legality material. This program successfully produced the innovative product "Bana-Ku" and P-IRT certification. However, further mentoring is needed to strengthen food safety implementation, halal document fulfillment, and business development so that banana composite products can develop into safe, legal, and sustainable food businesses.
